Lately I have been feeling like I need to improve my eating habits. Ever since having Molly, I usually don’t eat more than 1 complete meal per day, and that’s with a reminder from our nanny to eat since she’s watching Molly. Once she leaves, Molly consumes my time and eating healthily falls by the wayside. I usually reach for snack-type things and unfortunately they aren’t healthy. Not great. So when I received an email from SELF Magazine (one of my favorites for so many reasons!) with a link to DIY Energy Bites, I was intrigued. I clicked on it to find 9 no-bake recipes which include Pumpkin & Dark Chocolate Bites, Cookie Dough Bites and these Nutella Bites. I absolutely love Nutella, and I could really use something that’s a bit healthier to snack on that still satisfies my chocolate craving, so I gave these a try. The original recipe can be found in the link, but I have altered it slightly due to my taste and things I had in the house. These are definitely yummy and SUPER easy to make – give them a try!
- 1 cup rolled oats
- 3/4 cup Nutella
- 1/4 cup crushed almonds
- 1/8 cup flaxseeds
- 1/8 cup honey
- Mix all ingredients in a bowl. If not mixing well, put in microwave for 15-30 seconds.
- Put in fridge for 20-30 minutes to allow mixture to come together.
- Form mixture into balls about an inch wide.
- Store in the fridge – enjoy whenever you need chocolate and/or energy!
